This 2-day class focuses on the fundamentals of food service sanitation. Topics include
- food borne illness
- time/temperature
- personal hygiene
- cross contamination
- cleaning vs sanitizing
- HACCP along with other current food safety issues
The format of our program was developed so that everyone learns the required information. This is accomplished by using a variety of teaching methods. These include lecture, class discussion, audio/visual aides, written materials, practice questions, and demonstrations.
Our pass rate for the FSSMC exam is excellent. Successful completion of the course with a passing grade on the exam is our number one priority. We assess each participant's understanding of the course material prior to the exam. Additional assistance is available for those requesting it.
FSSMC Sanitation & Refresher Course - register online below
Illinois Refresher Course - The Illinois Department of Public Health (IDPH) requires FSSMC take a 5 hour refresher course before their certificate expires. This 5 hour course meets the requirements of IDPH, keeping students up-to-date on sanitation practices and new regulations. Important: THis course must be completed before your FSSMC certificate expires or you will be required to re-take the 15-hour course + exam.
Chicago Refresher Course - The Chicago Department of Public Health (CDPH) requires certificate holders to complete a 6 hour refresher course plus exam. THis course is designed to keep Chicago sanitation managers up-to-date with current sanitation trends and regulations. Important: This course and exam must be completed within 30 days of the expiration date on your Chicago sanitation certificate.
Please bring to class a current copy of your Illinois and/or Chicago sanitation certificate and a picture ID.
